As long as you don't rotate the pylons more the 45 degrees relative to the horizon, missiles will have no problem falling off them straight down.
If you do rotate the pylons more then 45 degrees you have 2 options:
1. explosive bolts - as long as your note pushing the weapon straight up, and explosive bolt can push it far enough of the hull so it can ignite safely.
2. these are space fighters after all... and nothings "falls" in space... so it doesn't matter...

(at best, since the fighter is moving, any thing released off of it will "drift" away do to the inertia and vibration).
