What is the blue thing on the bottom of the ship? Is it some type of engine core or part of the engines?

I seem to recall it's an extrapolation of the similar device on the Beliskner class Asgard vessels:

Like Bar said it's based on the Neutrino-ion generators on the Beliskner.

Is the hull going to be dark like the Daedalus or the lighter color like the excalibur?

I haven't decided yet, still a lot of model to make before I have to worry about textures but I think I'll go a touch lighter than the Daedalus.

the darker colors of the 304 class would seem to fit the construction line of the Tau'ri, I think it would suit the design far better, and give a more realistic feel to the design. but, that is mho. Great design, looks very good.

The show's models never struck me as having a dark texture at all... (of course it is all relative to the light intensity)

But many shots show the 304 class as relatively light grey, IMO. Many on these forums seem to render their ships as way darker than the show does.

I think a lot of people go darker since it gives the ships a more mean feeling.

Remember we are not building a fleet of teddy bears.

Indeed.
The mesh from the show is a very pale colour.
Not quite battleship gray, but similar in colour to primer.
The majority of the time, the ships are in space, and there is not always a lot of light unless they are close to a sun.
The best indicator of the colour of the Daedalus class is shown in the episode where the Odyssey goes to Atlantis(The Pegasus Project?).
It arrives at Lantia during the day and does a low pass around the city before landing.
