the undermost ship looks a bit strange to me, is that supposed to be a Constitution-Class?

I think it is Kuk, it must be either USS Constitution of a experimental built. Cause it looks way different than the USS Enterprise of the Motion Picture. Cause the TMP, Enterprise was exactly like that middle right one.

It almost looks like a cross between the other two...

I don't know anything about economics in the STAR TREK universe (and who could, since such doesn't exist), but I think they would still design first, build from design next. The bottom ship DOES look like a cross between the (original) Connie and the TMP refit (I personally never believed anything of an original Connie ever existed within the 'refit' version). No such ship would ever have been built, IMHO. You either re-design and build it, or it does not occur. These are not living things that evolve...

Doesn't really matter the designs are fine as they are, or as
variations on an earlier style.

Hmm... I'd have to whatch closely, but Boss may have a point, the bottom-most being the refit, the middle being the complete re-build, as the A was destoyed in "The Search for Spock" , only to return in "Undiscovered Country".
The B didn't enter until "Generations" and it was an Excelsior class...

Very very nice.
I'm surprised no one has figured it out.
Is not the bottom vessel the Enterprise as it would have appeared in the aborted Phase II?

Well, the left one is the Enterprise A/Refit, the middle one is a "testbed" in which the new technologie from TOS to TMP was tested (with some influences of the Phase II design) and the right one is the Constitution by Franz Joseph,
